Stacked Tortilla Breakfast Casserole

Ingredients
▢1 Pound Bacon, Cooked and Crumbled
▢1 Pound Pork Sausage. Cooked and Crumbled
▢1 Pound Package Diced Ham
▢10 8 inch Tortillas, Cut in half
▢8 Large Eggs
▢1 1/2 Cups Milk
▢1/2 Teaspoon Salt
▢1/2 Teaspoon Pepper
▢1/2 Teaspoon Garlic Powder
▢1/2 Teaspoon Hot Sauce
▢2 Cups Shredded Cheddar Cheese
▢1 Cup Mozzarella or Monterrey Jack Cheese

Instructions
Butter a 9x13 inch baking dish with 2 teaspoons of butter or spray with non-stick cooking spray.
Layer 1/3 of the tortillas in the bottom of the baking dish and top with the cooked bacon and 1/3 of the cheese.
Layer another 1/3 of the tortillas in the dish and top with the cooked and crumbled sausage and another 1/3 of the cheese.
Repeat with the last of the tortillas, the ham, and 1/3 of the cheese.
In a large bowl whisk together the eggs, milk, salt, pepper, garlic powder, and hot sauce.
Pour the egg mixture evenly over the casserole.
Cover and refrigerate overnight if desired, or bake right away.
When ready to bake preheat the oven to 350 degrees.
Bake, covered with foil oven for 45 minutes. Uncover and bake for 20 more minutes until cheese is fully melted and casserole is cooked through.

Hi Yall!

Since I am off work for the weekend, and maybe for the rest of the year! Hurray! I can think about hosting the holiday! If no one makes a suggestion for the meal, I am staying with the breakfast theme. Since it needs to be GF, I wondered if I could make a breakfast cassesrole with corn tortillas and found this recipe! In the comments, a reader said they made the casserole with fajita veggies instead of the meat.
Debbie, when I lived in California, we enjoyed a tortilla stack with probably fajita type veggies and black beans stacked between 3 corn tortillas and covered in a red sauce.
AG, if I had the EL Pato sauce, I would be ccoking spicy and saucy!
This is the one dish I have the ingredients to make!

On this recipe site, I see a couple more ideas that look tasty and healthy.
