I used 1 cup of Panko, 1/3 cup Parmesan. I seasoned the chicken thighs, rolled them in flower, then dipped them in an egg wash, and then rolled them in the parm mixture. I put them on a baking sheet and roasted them in the oven at 350 degrees for an hour. My guess is that if you used skinless/boneless chicken breasts, that you would want to reduce the baking time.

For the fish, I used the same strategy, but I baked them at 400 degrees for less then 15 minutes, but they were partly frozen. They were baked perfectly. If thawed, they may not take as long.
