I posted this a while back, but here it is again. I just used a recipe I found on line for parmesan encrusted Tilapia and I used it with chicken thighs.

Mix 1 cup Panko, 1/3 Cup grated Parmesan. Season chicken, then roll in flour. Dip in an egg wash, then roll in Parmesan mixture and place them on a pan. Bake them at 350 degrees for about an hour. ( I suppose you could use a hotter oven and speed that up a bit?) I guess you could also use chicken breast if you wanted to, but maybe not bake them as long so they don't dry out. This may also work with pork chops. I might give that a try.
