"food for thought" for this week! Mystery meat solved! It's Cowboy Cornbread!
Hubby has been wanting to make this since he saw it on Facebook.
The cornbread is mixed in with the meatloaf.
I looked up the recipe link and it sounds similar.
Also sending other recipes for comparison. One recipe uses creamed corn, no beans, and milk to mix with the cornbread. Hubby only used 1lb of turkey meat (the one that comes in the roll this time)
with the beans and cornbread added, it made a 9x13 dish that will serve several meals!
I had seen other recipes for tamale pie that use ground beef and cornbread. Searching inbox I saw one recipe from years ago that cooks olives with meat and puts cornbread crust on bottom of dish.
Another recipe tops casserole with cornbread! I think it looks picture perfect!
I heard there are some people here who are not cornbread fans.
Though when it was mixed with the ground beef or turkey you could not tell it was cornbread!
We also used original Rotel and it was not too spicy hot since mixed with other items!
Now I need to find warm work uniform. It may be cold and rainy when I leave in 12 hours!

Mystery Meatloaf!
Cowboy Cornbread (from Facebook)
Cowboy Cornbread Casserole
2 packs 59¢ cornbread mix
1.5 lbs ground beef
1 can rotel
1 can whole kernel corn
1 can ranch style beans
1 cup shredded cheese
1 pack taco seasoning
Mix cornbread according to package instructions then set aside
Preheat oven 425°
Brown ground beef, drain. Add taco seasoning, undrained can rotel, undrained ranch style beans and drained corn. Simmer for about 5 minutes. Stir into cornbread mix. Mix in shredded cheese. Stir completely. Pour into a greased 9x13 Casserole dish.
Bake approximately 25-30 minutes until toothpick comes out clean
Can top it with more cheese, sour cream, salsa or whatever your heart desires.
