Hello All! Like the cute kitty cat photos!

Hi Debbie! I knew you would be a creative chef! Wish I could have a cinnamon roll! We can celebrate December birthdays any day! Smiling

Lynda, like you, I would like to add more veggies! As a Southern girl, I ate most of the same veggies as you, except we didn't eat greens much.

So now I am gaining interest in the plant-based diets, after I bought meat!
Also I feel like the meal starts with the protein then adds the sides.
I guess a vegan diet would do opposite and start with veggies or protein, beans!

I'm thinking about how co-workers eat and it is opposite styles!
Some do Keto with focus on meat proteins. Others are on vegan diets.
In the break room, a new employee ate vegan with 15 bean soup.
Then she told me how she makes egg salad with firm tofu and black salt.
She said the black salt adds the egg flavor and you can't tell the difference!

When standing in check out line, I viewed a plant based recipe magazine.
Pretty PIctures! Made me want to eat every dish, if someone cooked!

So I told cashier about the plant based foods, she said she really likes vegan enchiladas.
I asked if they have beans. She said they have spinach and hominy.
So I "googled" info!

Then we talked about Veganaise which is an egg-free mayo. I know some people don't like mayo!
I've heard it here and at work. The other night someone ordered delivery with no mayo.
She was not happy when the shrimp poboy arrived with mayo on bread so it was also on shrimp!

I see there are garlic and spicy blends of the Veganaise.

I also heard Veganaise Chocolate Cake is tasty! Debbie, I may have to practice before December!

Info about Hominy that was a staple in diets of Native Peoples!

Now I need to think about the menu here, after having oatmeal for breakfast!

I wish I had these oatmeal sticky toffee cakes for breakfast, or anytime of day, or night!

Danny Seo's Oatmeal Sticky Toffee Bars

ingredients
4 cups filtered water
4 cups rolled oats
1/2 cup ground flax seeds
1 cup coconut sugar
2 (14-ounce) cans coconut milk
2 tablespoons vanilla extract
1 cup pecans, extra for garnish
1 teaspoon flaky sea salt

Preheat oven to 350 degrees, line inside of an 8x8 inch baking dish, or equivalent, with parchment paper, and grease sides lightly with oil of choice.
Bring water to a boil. Add oats, reduce to a simmer, and cook for 5 minutes, stirring occasionally, until oats are cooked through and have absorbed the water. Remove from heat and stir in ground flax seeds.
In a separate pan, add coconut sugar and coconut milk. Bring mixture to a boil and cook over medium heat for 15 minutes or mixture thickens to a caramel consistency. Remove from heat and add vanilla extract, This should yield 2 cups.
Chop pecans slightly and add to oats. Fold in half of the toffee mixture (approximately 1 cup) to oats and stir to combine.
Press out mixture firmly into lined baking dish and bake for 20 minutes, or until firm to the touch.
Cool before cutting into bars and drizzle with remaining toffee mixture. Top with pecans and salt.

Now I will see if I can dress up my leftover oatmeal! Smiling
