J.B.....Thanks for that most excellent tip on the rugs! I tip my hat to you. I will pass it along to my friend and her husband and I told my own husband about it. He was thrilled there was a cheap and easy fix as we have a few area rugs that could we could easily do that to ourselves. I never put books or anything else down on the rugs to flatten them for the very reason of what happened to my friend. I know me. I'd get busy and forget about them and probably wind up killing myself or my husband would come home tired at night and fall over them. Checked on her this a.m. She is doing better and managed some scrambled eggs but still in a lot of pain and still a bit loopy from the pain meds. Rolling my eyes. Poor thing. I think she will be for a while and it is going to be some time before the stitches come out of her lip.

As for potatoes I get bored with them too but am always a fan of my Greek style oven roasted potato wedges. Easy sheet pan recipe and goes good with everything. I'll give the recipe at the end.

I'm not the world's biggest crock pot fan either for the same reasons...everything comes out 'mushy'. I love it for soup, stew, sauces and pot roast once in a while. Most things though prefer the oven. It amazes me TT the things you cook in your crock pot. I just never quite got the hang of it I guess or found the right recipes for it. Although I like my meat thoroughly cooked I don't like 'mushy' food.

As for today the husband will be cooking chicken up on the grill. YUM. Kebabs today. Tasty and easy since we have some bell peppers to use up. I am going to make homemade spaghetti sauce and meatballs today. No store bought ones for me. That can cook and make the house smell amazing all day today and tomorrow. When cool I shall portion it up and freeze it for later uses.

Aside from that not much going on. Just enjoying our cloudy and rainy day. Hurray! We finally got rain either late last night or very early this a.m. as the ground is still wet and some puddles remain. Sun is struggling to peek out but it will be cooler for the next 10 days with good chances of rain all this coming week. About time! Hurray! We have been so over due.

Will get with you all a little later.

CRISPY GREEK OVEN POTATOES

INGREDIENTS:
3 lbs. Yukon gold potatoes
4 Tbsp. olive oil
1/2 Tablespoon oregano
1 teaspoon Kosher salt
1 tsp dried minced onion
3/4 teaspoon thyme
1/2 tsp each: pepper, garlic powder and marjoram and parsley

INSTRUCTIONS

1.) Cut the potatoes into wedges or chunks and put in a large bowl full of cold water. Allow to soak for 30 minutes and change water if it gets real cloudy.

2.) Put an extra large sheet pan in the oven on the middle rack and heat the oven at 400F. Leave the pan in the oven.

3.) Rinse the potatoes in cold water and squeeze them in a towel to dry. When dry add to a bowl or very large Zip-lock bag.

4.) Add oil and toss to coat. Add seasonings and rub with hands or seal baggy and 'smoosh' gently to coat with seasonings.

5.) CAREFULLY remove hot pan from oven. Drizzle with EVOO and add the potatoes to the sheet pan. Spread them out with space between so they DO NOT touch. This allows them to crisp and not steam.

6.) Bake 25 minutes. Flip each potato over. Bake another 15 minutes until gold and crispy.

Enjoy. Smiling
