Oh hey...forgot about the 'chicken thigh on the fly' recipes. Sorry. I'll post one as I love this.
It is perfect for bone-in, skin-on thighs. You can make it indoors in the oven/broiler or outdoors on the grill. You can prep and marinade ahead and no overly fussy ingredients. Oh you can halve, double or triple the recipe. Goes with any side too: rice, pasta, potatoes.
I just love this dish.
CITRUS CHICKEN THIGHS (Serves 4)
INGREDIENTS:
6 medium sized green onions; thinly sliced both white and green parts
1/2 bunch cilantro; leaves and very tender stems only
4 garlic cloves; very finely minced
2 tsp. finely grated lime zest
2 tsp. finely grated orange zest
1/4 cup fresh lime juice (use the zested lime for this)
1/4 cup fresh orange juice (use half the zested orange for this)
1/4 cup reduced sodium soy sauce
2 Tbsp. vegetable oil
1 Tbsp. kosher salt
2 - 2.25 lbs. skin-on, bone-in chicken thighs (about 4 large ones)
INSTRUCTIONS:
1.) Set aside 1/4 cup scallions, 1 tsp each lime and orange zest.
2.) Pulse cilantro, garlic the lime and orange zests, lime and orange juices, soy sauce, oil, salt and remaining green onions in food processor or blender until a coarse/lumpy puree forms.
3.) Set aside 1/4 cup marinade.
4.) Put the remaining marinade in a large resealable plastic bag. Add the chicken to it and seal, turning to coat. Chill in fridge a minimum of 1 hour or up to 8.
5.) Preheat broiler.
6.) Remove the chicken and put skin side down on a foil-lined broiler proof baking sheet. Throw out the marinade.
7.) Broil chicken until it is light browned; about 5 minutes.
8.) Turn the chicken thighs and broil until cooked through; about 12-15 minutes longer (Internal temp at 165F in thickest part and juices run clear).
9.) Serve with the reserved marinade (can warm) and green onions and zest on top as garnish.

Edit: I'm sure this would work just fine with skin-on chicken legs also. I would just plan on 2 legs per one serving a person. So for this recipe and dinner for four I would do 8 legs. Get 10 in case anyone wanted seconds.
