Good Morning all,

Chip...nice save on the pheasant. Looks tasty as pot pie and I'm sure it was quite good. Sorry they came out tough. Wonder why? Is the bird's age a factor on how tough/tender the meat is? Also I know it is a super lean meat with little to no fat. Did your original recipe call for some bacon or other added fat to be added? Thinking

Tom...thanks for the compliment on dinner. Love chicken thighs; either bone in-skin on or the boneless-skinless. They are almost always cheap. I try to keep a pack of both on hand in the freezer. From fancy to fast you can make so many meals with them and you just can't mess them up no matter how you cook them. If you find some the next time you are at the store, here's a quick and easy recipe for the chicken we made yesterday.

PARMESAN-CRUNCHY BAKED CHICKEN THIGHS

INGREDIENTS:
1 egg
1 Tbsp. milk
1 small can (or 1/2 a large can) French's brand fried onions; crushed
3/4 cup grated Parmesan cheese
1/3 cup Italian seasoned dry bread crumbs
1 tsp. paprika
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
4 - 6 boneless-skinless chicken thighs; trim of any fat
2 - 3 tablespoons butter; melted

INSTRUCTIONS

1.) Combine the milk and egg; whisk to blend. Preheat oven to 350F.
2.) Crush the onions and add to bread crumbs, Parmesan cheese, paprika, salt and pepper in a shallow dish. Mix well.
3.) Dip the chicken in the egg mixture and then coat in the bread crumbs.
4.) Arrange chicken in 9" x 12" baking dish sprayed with non-stick spray or brushed lightly with butter. *
5.) Drizzle chicken with melted butter and bake at 350F for 35 - 50 minutes or until done and chicken has proper internal temp of 165F.

* Baking this way is fine but the bottom gets 'soggy' while the top is crispy. We put some foil down in the pan and then baked the butter dotted chicken on top of non-stick sprayed wire racks. That way it gets crispy on top and the bottom as well cutting calories and makes clean up super easy. Smiling
