If you use ginger root a lot, buy it in the grocery. After using what you need, just plant it. It makes a nice looking green plant, and any time you need it for cooking, just dig up a bit. I don't have any going right now, but it's been a good way in the past to not waste it. I tend to use it only a few times a year, and the rest always was wasted.
