Hi all,
That sounds soooo good TT. It reminds me of Garides me Saltsa (Shrimp Scorpio). It is one of my favorite Greek dishes. Perfect as an appetizer with pita chips on the side or good bread rounds. Easy to make and you only need to bake it for 5 minutes. It is wonderful over pasta or rice for a fast meal . I'll post recipe at end. I couldn't see the recipe you gave the link to. Maybe you will be nice enough to post it for us when you have time?

Chip...yes lots of adjustments for high altitude cooking: more time, more water, and I forget is it lower or higher heat? Do you feel like flavor/taste suffer any in comparison to lower altitudes in your opinion?

Dinner for me tonight was another go at the penne and meatballs. It was so good. Salad and a glass of 14 Hands Stampede. Dessert was some fresh pineapple. Last trip to the grocery store yielded a fresh pineapple for $2.00. So we have been enjoying pineapple the last day or two. One of my favorite treats and I never feel guilty enjoying how yummy fruit is. Big Grin

I guess I'll get to those enchiladas tomorrow. Really bummed out today. Beautiful weather of 82 outside and sunny but the wind is 43 mph! Grumbling There's a complete brown-out outside and dust flying around everywhere! ARRRRRGH!. So I just stayed inside all day and cleaned. Got everything done. Tomorrow only have to do the floors then I can get out for a walk as it should be a lot less windy but also a lot cooler in the low 70s. The wind will be almost gone and it will be a nice day.

Tom...Wow! I tip my hat to you. That is just awesome and congrats to you. I was just thinking about my own health lately and how I used to be so physically fit and active. Now I am moaning and groaning after a day of house cleaning. Haven't gained much weight but boy things sure shift around and not in a way I like. It is time for me to really get motivated and start doing a lot of things different. Mainly stop smoking. That is my worse habit. *Blush*

Dave...so what do you think about lamb? Any recipe ideas or inspiration yet?

GARIDES ME SALTSA (SHRIMP SCORPIO)

INGREDIENTS:
3 Tablespoons EVOO
1.25 cups finely diced onion
1 Tablespoon fine minced garlic
1/2 cup finely minced parsley
1/4 teaspoon dry mustard
1/4 teaspoon hot pepper flakes
1/2 teaspoon sugar
few shakes pepper or cayenne to taste
2 cups canned peeled plum style (San Marzano) tomatoes and juice/puree; chopped
3/4 cup tomato sauce
1 pound large or 1.5 medium shrimp; peeled and deveined
1-1.25 cups crumbled feta cheese
optional: some tomato paste if needed to thicken; a splash of white wine or chicken stock to loosen the onions if need be.

INSTRUCTIONS:
1.) Preheat oven to 425F
2.) Heat oil in a saucepan and add the onions. Cook them stirring often until they start to brown. Add pepper flakes last minute or so. If they look real dry add the smallest splash of dry white wine or chicken stock to loosen a little.
3.) Add the parsley, dill, mustard, sugar, and garlic. Cook until garlic becomes fragrant and takes a little color on.
4.) Add the tomatoes and sauce; simmer for 30 minutes on low. DO NOT add any salt at this time.
5.) Add shrimp to sauce and cook for 3-5 minutes. If it looks thin add some tomato paste if need by the Table spoon to thicken slightly.
6.) Pour the mixture into a 1.25 quart casserole dish and sprinkle with the crumbled cheese.
7.) Bake for 5 minutes or until the cheese melts.
