Jim is making beef stew for dinner tonight... tomorrow I'm heading back to Pittsburgh. Right now, I'm trying 2 weeks "on" and 2 weeks "off," alternating with John, but I'm hoping to bounce back a little more so I can do 3 weeks and 1 week. John is handling all their finance stuff, so 3:1 seems fair. Not sure how much time Mom has left, but it's weeks, maybe a few months.
Beef stew is in the Instant Pot! Brown cubes of sirloin tip or top round, add beef broth, red wine, garlic, black pepper, onions, potatoes, and cook High pressure for 35 min, natural release. It's a new fave around here!
