Chip, thanks for posting your message and the pictures! Tuscan soup looks tasty! It will be interesting to see how you adapt recipes. We have many specialized menus here, gluten-free, low sodium, some at work are no pork, others are plant - based. I need to add more veggies. I am curious about your new recipes and how you adapt your previous ones.

We need to find a bacon substitute.
This recipe has meat, though you can probably modify it.
You can probably use vegetable sausage and coconut mil. I'm wondering if you will make a swap for bacon.
Of course, you can use your fresh cured bacon in your bowl!
