Tom, I use the liquid Certo recipe for pear or peach jam, grate the rind from the lemons before juicing, and add about a tablespoon of finely grated fresh ginger, or more to taste. Sometimes I add a grinding of fine black pepper. My son, DIL and I love this jam. Pear time so I should be making some soon..
