TT, here's my version of Cajun rice. Mind you it's one I made up, not authentic, but it was very tasty.
In a sauce pan large enough to cook rice, I added a couple Tbs. of oil and let that heat up.
Then I added about a half cup each of minced onion, celery, and carrots, also add 1/4 cup diced peppers and let that cook for about 5 minutes, or until the onions were translucent. To that I added two chopped cloves of garlic, and 1 cup of Jasmine rice, and stirred it while cooking for about a minute or two. Then I added 2 1/2 cups of chicken stock and about a half teaspoon of Tony's seasoning. (I suppose any Cajun seasoning would work) I mixed that up a bit, put a lid on it and let it simmer for 15 minutes. After 15 minutes, I removed it from the heat and left it covered for about 15 minutes, or until I finished making the shrimp. I didn't add any extra salt, as the seasoning has a lot of salt in it, and that was enough for me.
For dinner last night, I roasted some chicken thighs with rosemary and garlic. I had some lightly buttered green beans from the garden, baked sweet potato, and some cucumber salad with it. I think that is the last of the cucumbers for the season, as the vines are getting dusty mildew on the leaves, and I don't see any new growth, guess it's time to pull up the vines.
