Good morning all,

Margaret....chicken dinner looks awesome. Glad your son joined you and you all had a fabulous TG celebration with good food you enjoyed. Smiling

Sean...Welsh Rarebit looks tasty. Been eons since I have had it. Never made it. I'm sure it wouldn't be hard or take long. Usually if I have bread and cheese I opt for a grilled cheese and soup instead. That would be a nice change of pace though. As for duck liver pate....I'll pass. Liver of any type...ewww. Glare

As for us it was oven Fried Haddock last night. Fantastic! Super crispy, crunchy and delicious. Husband loved it also. Best recipe I tried for this technique and most convincing. Surprisingly low in calories and carbs and high protein. Left overs today will be dinner. I think I will make peas or maybe some brussels's sprouts as the asparagus is gone. There's still plenty of rice left. Any fish left after today I can use to make yummy fish tacos for lunch.

CRISPY OVEN FRIED HADDOCK (or any white fish)

INGREDIENTS
-- 1/2 cup milk
-- 1 egg
-- 2 teaspoons salt
-- 3/4 cup bread crumbs
--1/4 cup finely grated Parmesan cheese
-- 1/4 teaspoon each: ground thyme, garlic powder, onion powder, paprika, cayenne or black pepper
-- 4 large or 6 medium Haddock fillets; washed and dried very well
-- 1/4 cup butter melted
-- Olive Oil Pam brand non stick spray

INSTRUCTIONS:
1.) Move oven racks to top part of the oven and preheat oven to 500F.

2.) In one bowl mix the milk, egg and salt. In a second bowl mix the bread crumbs, cheese and spices.
(I used glass baking dishes instead of bowls since they were long and flat and it was easier to fit the fish fillets in them flat to coat with the egg wash and crumbs)

3.) Dip the fillets on at a time in the milk and then the crumbs. Make sure to press the crumbs firmly onto both sides of the fish fillets.

4.) Use wire baking/cooling racks and put those on baking sheets. Place the coated fish on the wire racks. Drizzle the fish with the 1/4 cup of melted butter. The wire racks keeps the bottom from getting soggy and allows it to get crispy as well.

5.) Spray the fish lightly with the Olive Oil flavored non stick spray. This plus the high heat of the oven is what gives the coating a super 'crunchy-crispy' texture. Give it all a squeeze of fresh lemon juice.

6.) Put the baking trays in the oven on the highest racks and bake 12-15 minutes. Keep an eye on the fish and check in 8-10 minutes as every oven cooks differently and temps/heat varies.
