I put drop dumplings into the soup tonight, just that and the broth and the chicken. Delicious! These are the same dumplings from Green Bean & Potato Soup with Dumplings, https://davesgarden.com/guides... -- first time I've used them in anything else, but from Jim & Joyanna's reactions it won't be the last! Easier than making rolled dumplings for chicken & dumplings.

Drop Dumplings

2 eggs plus 1 teaspoon water, well beaten
1/2 cup all purpose flour
1/4 cup grated parmesan cheese
1/4 teaspoon paprika
pinch cayenne

Combine flour, cheese, spices. Add egg and stir with fork until combined. Should be a soft, sticky dough... if it looks "wet," add a couple more tablespoons of flour. Drop by small spoonfuls into simmering soup. (I take a large spoonful and "cut" bits off with a smaller spoon to drop in.) Let soup simmer at least 2 minutes after last dumpling goes in, to be sure they are all cooked. The green bean soup articles has photos so you know what the dumpling dough looks like.
