I love cheesecake but have avoided learning how to make it, because a slice at a restaurant once or twice a year is quite different from having an entire cheesecake in the house! DD loves it too, though, so...

I did get a cheesecake pan that fits into my instant pot. Supposedly, "Cheesecake #17" from pressurecookrecipies.com is about as fool-proof as it gets. I really like Amy & Jacky -- all the recipes on their site are well tested. There were 16 less-good versions of that cheesecake!

Margaret, if holiday cooking has stopped being fun, close the kitchen. There are alternatives to home-cooking, and you've done a ton already!

When a holiday gets close, I take my mom's advice and start crossing things off my list.
