Sally, chicken thighs only take about 45-50 minutes in the oven to bake. Just smear some butter/oil on them, season them up, and put them in a 385* oven. You'll get crispy skin and still moist chicken. It takes little doing and is sure to beat the taste of slow-cooked stuff.
I baked up two thighs here tonight. The small one I used for tonight's soup. The bigger one I saved for chicken salad. I loved the soup invention tonight. I'll have to write it down. It was a hot and sour (light-ish on both) bok choy chicken soup. It really came out great. Glad for the extra too. I'll save that and will add some fresh bok choy to it when I heat it up. It was really fine to have on a pretty blah weather day. Comfort in a bowl. And speaking of comfort... the cats sure are.
