I make a sauce with grated ginger, a couple of tablespoons of soy, about a teaspoon or two of rice wine vinegar, a good tablespoon of Shaoxing wine and generally either a tablespoon of oyster sauce or Hoisin, thinned with couple of tablespoons water - balanced with a bit of sugar or honey.
