AG, here's how to make the puff pancake.

Pre heat the oven to 400.

Batter
2 eggs
1/2 cup flour
1/2 cup milk
dash of salt
Whisk the above ingredients thoroughly. (I use a hand held blender.)

Melt 2 Tbls. real butter in a 10 inch pan (I spray the pan with Pam, and use only 1 T of butter in cast iron skillet.)

Pour the batter into the hot pan and place in the oven.

Bake for about 25 minutes or until the pancake is golden brown.

It will puff up, but will deflate some when taken out of the oven.

Remove it from the pan to a serving plate, and fill it as you like and serve. If I fill it with fruit, I sprinkle it with powdered sugar.

Yesterday I sautéed apple slices in butter, and carnalized them with a bit of sugar with a squeeze of lemon juice.
Politicians are like diapers, they need to be changed often, and for the same reason.
