There are plenty of fake chicken products out there now (made from tofu or mycoproteins). You will barely notice. Ofcourse, if you are allergic to mushrooms then you better be tested for mycoprotein allergy aswell.
I can't have soy, otherwise I would be using tofu.
I went to the orthopedic doctor today and got cortisone shots in my knees. I am still going to physical therapy once a week. Most of the activities I can do at home, but it keeps me more motivated to do my exercises at home. The place is just a couple miles away. It sounds like a lot of people don't do their exercises at home, but you will get nowhere that way.
After trying some meh recipes I found on line and through a little trial and mediocrity (no error), I came up with a marinade for salmon that we both like.
1/2 cup lime juice
1/4 olive oil
1 T fish sauce: This provides all the salt I want. (I think it's better than soy sauce and it has no soy.)
1 T honey
1 tsp thyme
1/4 tsp garlic powder
1/2 tsp onion powder
Stir together. If the honey doesn't want to dissolve, microwave the sauce for 20 seconds and stir again.
I marinated for 6 hours.
Cook the salmon however you like.
Notes:
Fish sauce: It comes in a small bottle and should be found with the soy sauce. A form of this was the favorite condiment in Ancient Rome.
Honey: I used avocado honey, which I realize perhaps none of you can find. It has an extra element of flavor and I don't like it on toast or cereal, but it worked really well here. It is a very dark honey and has gotten really thick over the years. I don't look for ways to add sugar and wasn't going to use it, but the marinade was bitter without it.
Garlic: Use as much as you want. I don't want to taste it, but I like what it does in the background.
