those are lifted or raised plants ..... imagine what "can be" just below the soil line -
an analogy might be, "we only see the tip of the iceberg"

and that's the goal of raising / lifting the plant every few years ....

the bonus ... the plant will eventually break the pot, as roots expand ...by raising / lifting .... the plant wont break the pot and it can stay in its old home for a few more years
