Pig Picking Cake...DELICIOUS..cool and refreshing
Ingredients
1 package GOLDEN yellow cake mix, plus the ingredients the box mix calls for and add one extra egg
1 can (11 ounces) mandarin oranges, drained WELL
1 can (20 ounces) unsweetened crushed pineapple, drained WELL
1 package (3.4 ounces) instant FRENCH vanilla pudding
mix
12 oz Cool Whip

Instructions
Prepare cake exactly according to the directions on the box...EXCEPT YOU WILL ADD an extra egg AND the WELL drained oranges
Divide the batter between two pans ..bake according to box DIRECTIONS and let cool COMPLETELY
ONLY WHEN THE CAKE IS COOL WILL YOU MAKE THE ICING
IN BOWL Combine the WELL drained pineapple and THE dry vanilla pudding mix. And mix WEL
Fold in the Cool Whip...you have to work fast ..TRY TO GET IT ALL MIXED IN BUT DONT MIX SO LONG THE COOL WHIP LOSES ITS FLUFFINESS
Spread some of the frosting on the top of one COOLED layer.
Then put the other layer of cake on top of that. Spread the remaining frosting on the top and sides of the cake.
Garnish with mandarin oranges or pineapple chunks OPTIONAL. It doesn't need it
STORE this cake in the refrigerator...Must be served cold
