...actually...if you steam them rather than boil them they will peel easily regardless of how fresh. My eggs are from the hens in the garden and so very fresh. I can never peel them when boiled but seldom have a problem when steamed. In addition, I think the eggs (when being cut and used as in a composed salad) are more tender and less 'bouncy'.
Bring water to a boil, place eggs in a steamer basket over the water, cover and time. I go 9.5 minutes for a not quite cooked-through egg (you know, a center darker yellow bit in the yolk) and about 10.5 to 11 for hard cooked. Drop immediately into ice water. Easy and really makes a difference.
