Mexicali Meat Loaves
1 lb ground beef
1/2 cup Quaker oats, quick or old fashioned, uncooked
1 egg
1 8-oz can tomato sauce
1 4-oz can chopped green chilies, drained
1tbsp plus 1 tsp instant minced onion
1 tsp chili powder
1/8 tsp garlic powder, or add to taste
1/2 tsp salt
1/2 cup of shredded cheddar, I use lots more
Combine meat, oats, egg, 1/4 cup tomato sauce, 2 tbsp green chilies, 1tbsp onion, chili powder and salt; mix well. Shape to form four 4x2 inch loaves; place on 8" baking dish. Bake in preheated 375/350 depending on your oven, for 25 to 30 minutes.
Combine remaining tomato sauce, green chilies, onion and garlic powder in a measuring cup or bowl and heat in microwave oven.
To serve, spoon sauce over meat loaves, sprinkle with cheese.
I usually double the recipes and make the loaves a little larger, I use more chili powder, and add garlic powder to the meat mixture. I also make more of the tomato sauce and make it very spicy with hot chili powders, and other Mexican type seasoning.
