Margaret, I can't leave well enough alone when it comes to bread; so I' constantly tinkering with the recipe. What I've done for awhile now is to start with 1 cup of oatmeal, 1/2 cup of corn meal and about the same of 12 grain cereal. I pour a cup of boiling water over it and let it sit while the yeast proofs (1 1/2 tbsp. in 1/2 cup of warm water + approx. 1 tsp sugar). Then I add 3 1/2 cups of Robin Hood Best for Bread whole wheat flour, 1/2 cup milk powder 3 tbsp. brown sugar, 1/2 tsp salt. Then I add the yeast, 1/4 cup of cooking oil, 1 1/2 cups of warmish water and pumpkin seeds or sunflower seeds or anything else I might add. Mix it all together and add enough white flour to hold it all together (usually about 1 cup). Knead, adding white flour as needed. If I have time I give it 2 rises of about an hour each before shaping it into loaves and letting it rise again before baking.
