It would be evident if yellowing was caused by disease, such as mildew, I would think.
There are "white" cuke varieties- which could be described as pale yellow...

I grew them once- as a novelty. Some modern green varieties may have white heirlooms genes in their parental gene lines, so that trait could come through on occasion.

Is it just one plant, or across many?
All plants from the same seed source?

My Google search of "white cucumbers" brings up white varieties, not reasons why normally green cukes would turn white. These are white varieties, looking much like yours....
