Met lovely ladies for lively lunch....at the buffet!

After helping serve at the food kitchen.

Talked to man in charge.

Commented that he must need to cook donated food.

Rosie, since we miss you at the Chow Time table,
I posted fish stick recipes in your honor!

He said once they had a large quantity of fish sticks donated,
and searched for recipe using fish sticks and made stew!

I looked for recipe for fish stick stew, found fish stick casserole.

The recipe I decided to post here is.....Fish Stick Tacos!

These use Gorton's Haddock Fish Sticks or Fillets
(I'm not promoting a certain product)
I can picture, and almost taste, fish tacos with slaw.
I don't think this recipe uses slaw so I'll post a 2nd recipe!

Fish Stick Tacos!

INGREDIENTS
▢16 pieces Gorton's Haddock Fish Sticks
▢8 flour or corn tortillas
▢1 c. guacamole
▢1 c. pico de gallo
Lime Dressing
▢1/3 c. sour cream
▢1 Tbsp lime juice freshly squeezed
▢1/4 tsp cumin
COOK MODEPrevent your screen from going dark
INSTRUCTIONS
Prepare Gorton's Haddock Fish Stick according to package directions.
Meanwhile prepare guacamole and pico de gallo if you have not done this.
In a small mixing bowl combine Lime Dressing ingredients and whisk until combined. Store in refrigerator until ready to assemble tacos.
When the fish sticks are almost done prepare corn tortillas according to directions.
To assemble tacos place two fish sticks in a tortilla. Top with guacamole, pico de gallo and lime dressing. Serve immediately.

How to Char Tortillas
After warming each tortilla stack them on a dish towel as you go. You'll want to fold the ends over the stack to keep in the heat while you make the next tortilla. This keeps them warm and steams them a little to soften any stiffness the tortilla has.
Gas Stove Top - Turn burner on lowest setting and place one tortilla on the burner. Let them sit for about 30-45 seconds and when you can see the bottom is slightly charred flip tortilla over with a tongs and repeat on the other side. The second side will take less time than the first.
Cast Iron Skillet - Warm skillet over medium-high heat and then place tortillas in skillet for about 10-15 seconds per side.

This recipe has slaw with garlic aioli (or maoli) on fish sandwich.
I thought the slaw will be tasty on fish tacos, too!

Fish Sandwich with Garlic Aioli Slaw

INGREDIENTS
▢4 Gorton's Fish Sandwich Fillets
▢4 buns
▢2 Tbsp Butter
Coleslaw
▢3/4 c. shredded cabbage
▢3/4 c. shredded red cabbage
▢3/4 c. shredded carrots
Garlic Aioli
▢3/4 c. mayonnaise
▢1/4 tsp black pepper
▢3 garlic cloves minced
▢1 Tbsp lemon juice
NSTRUCTIONS
Mix all Garlic Aioli ingredients together in small bowl. Cover and refrigerate for at least 30 minutes.
Bake Gorton's Fish Sandwich Fillets according to package directions.
When fish is almost done cooking in a small bowl combine cabbage and carrots. Pour garlic aioli over the top and mix until combined.
Remove fish from oven when done cooking. Remove from sheet pan and place on plate, cover with tin foil to keep warm.
Turn oven to broil. Spread butter on inside of each bun. Place on sheet pan butter side up. Broil 3-4 minutes or until buns are golden brown. Remove from oven.
Place one fish sandwich fillet on bottom of bun. Top with desired amount of coleslaw and top with top of bun.
Serve immediately.



While searching for the coleslaw dressing recipe,
I saw this tasty healthy recipe for "skinny" broccoli slaw!

"Skinny" Broccoli Slaw!

INGREDIENTS
▢4 c. broccoli florets
▢2 c. red cabbage shredded
▢1 c. carrots shredded
▢1 sweet onion finely minced
▢1/2 c. raisins
Coleslaw Dressing
▢2/3 c. non-fat plain Greek Yogurt
▢2 Tbsp apple cider vinegar
▢1/2 Tbsp lemon juice fresh
▢2 Tsp granulated sugar
▢1/4 tsp ground celery seed
▢1/2 tsp salt
▢1/4 tsp pepper

INSTRUCTIONS
In a small bowl whisk together all of the coleslaw dressing ingredients. Set aside.
In a large bowl mix together broccoli, red cabbage, sweet onions and raisins. Pour dressing over the top and toss to coat. Cover and refrigerate at least two hours.

Since these 3 recipes came from 1 website,
which I think I will like to browse and borrow recipes,
I should give credit where credit is due.
