Hi Everyone!
We just had hog day.. people coming from all over the country to cook their BBQ .. its a big deal here. Pig calling contest also. And a fake Elvis.. I didn't go this year. I was downtown the day before and it was jam packed... I didn't want to deal with the traffic.
I don't cook as much --for just one. But, I haven't given it up all together. The grandkids are always hungry, but what they like there's no point mentioning here .. I make A LOT of fresh pizza. And I make a lot of a basic pasta sauce .. lately the girls have the hots for sliced polenta with a balsamic honey drizzle. With a side of mozzarella also drizzled. As a matter fact, I could put out a juice glass of the balsamic honey seasoning sauce, I make, and they probably would not notice that the mozzarella and polenta are missing!
Last week I fixed a big meatloaf and one of the kids wanted a white clam sauce. I stuffed some acorn squash. And also a spaghetti squash, and that was with ground sirloin, mozzarella, tomato, sauce-- sort of like a pizza.
I roasted chicken I stuffed it with rice and peas. I made a potato egg and bacon omelette and threw some broccoli in it. And so I guess I have been cooking a little.
Fall is here. I actually considered putting the heat on this morning, but that was foolish. It did not last but for an hour before the house warmed up. But the skies are Carolina blue and cloudless. A few leaves have hit the ground but they're not discolored. The copperhead have birthed their babies.. and 2 adults were up close to the house. That's a no no I don't mind. The black snake with a copperhead are persona non grata. Mom and deer have visited with their babies. They've got their eye on the bark of the red bud, so I put a wire fence around it. I'm still waiting to enclose the porch and build a carport. A draftsman has been working on some plans which are required by my county. I got on here today to attach this photo.
