Hi Yall! Smiling

Anna, thanks for sharing oven research!
After our cool fall air blew in with rain drizzles,
it will be nice to turn on the oven!
Now I can turn it on without food in it,
since I don't plan on cooking.
Though that defeats purpose,
so I should get up and move (reheat coffee!)

Back home after taking car a few blocks to repair shop to check engine light which I think is coming on due to a leaky valve on gas pressure.

Since Mr. TT stopped by to pick me up, I "sweet talked" him,
not really, more matter-of-factly said, "Want Waffle House"?
Initial answer was No, have to take meds, will get indigestion etc.
Well, at the next driveway, he turned car around, and the 20 yr old car knew they way to Waffle House, which all of this is near by.

People at table next to us, had perfectly golden brown waffles.
So I had a hard time deciding.

My order of 2 eggs over medium with grits (next time I should add cheese) and raisin toast with apple butter, hit the breakfast button!

Now I'm home on Chow Time chat before starting chores,
since now I have no excuses!

Continuing with the Tater Talk!

Last night after posting message and recipe,
I remembered I left out an important ingredient, white wine!

My Google search shows a different recipe with different name.

The recipe I saw cooked on Cook's Country is
a Spanish Potato Dish where potatoes baked with onions, olive oil and wine!

When the potatoes are cooked and are soft,
then the "dry" white wine is added near end of baking.

Cook's Country gave the explanation and diagrams,
of why the starchy potatoes needed to cook and soften
before adding the acidic wine that delays cooking time.

They also showed how the dish is initially covered with foil,
then the later cooking the foil is placed loosely on pan
so that the condensation escapes and doesn't make potatoes mushy.

I thought these potatoes dishes interesting since they are
basically potatoes, olive oil, onions and S & P, no cheese, etc
They also looked dazzling delicious! could be tv cameras!
I'm glad I remembered the wine, not the whine!

Here is recipe for Spanish Potatoes with olive oil, onions, white wine!

Patatas Panaderas (Spanish Potatoes with Olive Oil and Wine)

Yield: 6 servings
Author: Karen Kerr
These Spanish potatoes with olive oil and wine are such a simple dish to make, but the resulting flavor and creaminess will surely have you make this dish again and again.

INGREDIENTS:
2 1/2 pounds Yukon Gold potatoes, peeled and sliced into 1/4 inch slices
1/3 cup extra virgin olive oil
3 1/2 teaspoons Diamond Crystal kosher salt, or 2 5/8 teaspoons Morton's kosher salt.
1/4 teaspoon black pepper
1 brown or sweet onion, halved, and thinly sliced
2 large cloves garlic, minced
1/2 cup dry white wine

INSTRUCTIONS:
Heat your oven to 400 degrees F.
In a large bowl, stir the potatoes and olive oil until the potatoes are totally coated.
Add the salt and pepper and stir.
Stir in the onion slices and the garlic. Pour the ingredients into a 13 inch by 9 inch baking dish and spread evenly.
Cover the baking dish with foil and bake the potatoes for 40 minutes.
Reduce the oven temperature to 350 degrees F and remove the dish from the oven.
Pour the wine over the potatoes.
Lightly place the foil over the baking dish so that there is enough room on the sides for evaporation.
Return the dish to the oven. Bake for an additional 20 minutes.
Remove from the oven and let cool for 10 minutes before serving.

Karen's Kitchen Stories

I went back to take a 2nd look at the cooking website since I thought I saw a recipe for Sourdough Rosemary Bread for Sally.

Of course I glanced at the link for the recipe index which shows recipes for
Air Fryer, Appetizers, Pizza, and Breads.

So I'm posting a link to the recipe collection!
