It doesn't have to be. Who said it was? No one.

For the purpose of pruning guidance, all the plant needed to be is apically dominant. The plant is Eugenia myrtifolia aka Syzygium myrtifolia, commonly: brush cherry. It's a perfectly fine stand-in for Olea when all one is doing is using it as a pruning prop.
