Good Afternoon all,
Good eats all around and it sounds like everyone has managed to use up the last of their holiday leftovers. No exception here. Yesterday I did the fridge inventory. Spotted some leftover steak, 3/4 of a red bell pepper, 1/2 of an onion and a jalapeño that all needed to be used up. So, I did what came naturally---made fajitas.
Perfect amount for a generous fajita each. The black bean and corn salad was a perfect side which got a bit of fresh cilantro. And because it was there, I tossed the last of the broccoli on the plate too. Nice and easy dinner. Glass of red to go with.
Dave and I did breakfast this morning. Nothing as fancy as poached eggs but just simply scrambled along with some sausage and toast. Simple, fuss free and good. It was nice to have breakfast together for a change. I'm going to make Cod Puttanesca tonight. Looking forward to some good pasta and seafood. Pics of that to come. Not sure what's on the menu for the rest of the week but as usual, I'll figure it out.
BTW....Does anyone knew what TT is up to these days?

Sean...The DO's Ajiaco looks quite tasty. Does it freeze well? Would be nice if you could freeze it.
As Donald pointed out, it is difficult to halve or reduce a lot of ingredients. Is there a second meal you can plan that uses a lot of the same ingredients?
Cuts down on both leftovers and waste. Also good looking eggs. Nicely done.
