I was having success with my veggie muffins, feeling better, losing weight, not hungry!
You can find recipes online for egg and veggie muffins.
I had chopped salad kits that need eating and I am not much of a cold salad gal. I cooked salad 🥗 items in saucepan, spinach, cabbage, mushrooms, onion, celery, seasoning, take off stove, add beaten eggs, bake in tins.
Some recipes add several eggs, like 6 eggs. Mine were fine with
1-2 eggs depending on veggies.
I think they also freeze and reheat well. This week I put 2 muffins and piece of bread on toaster oven tray and heated all together. You can also add cheese to mix or sprinkle on top.
I lost few lbs and felt better!...
Until I got tired at work, after not sleeping well and found ice cream! Well tomorrow is new day! And it's work pot luck for monthly 🎂 birthdays! I will need to pay attention to what I eat!
