If you're type 2 diabetic, skipping meals is a bad idea. You should have something every 4-6 hours, to level out the blood sugar.
What degree of vegetarian?
We eat no flesh but do have eggs and dairy, which makes the protein requirement much easier to fulfill. We buy oat milk and free range local eggs; cheese and chocolate are the guilty pleasures.
Tonight, for the OG, I made a big salad. It starts with Romaine lettuce (I slice it in ribbons, for easy mixing) and usually includes red onion, cucumber, pepper, tomato and radish (Chinese, for preference, shaved). Salad dressing of choice in moderation. On top, any combination of: toasted peanuts or walnuts, toasted sunflower and/or pumpkin seeds, small cubes of tofu fried in oil and soy sauce, cubed cheddar and boiled egg. A better version is spinach salad with poppy seed dressing.
Moderation is the watch-word with fruit. Cranberry, blueberry and grape are preferred; the sweeter ones, a little at a time. I usually keep a pot-luck fruit salad going, topping it up with what's available.
Another benign treat is 2% yogurt pudding.
Whole grain bread is OK, one slice per meal; so are unsweetened cereals.
He's been keeping it under pretty good control for nearly 20 years.
