That's the nice thing about gardening, in particular the sempervivum. There are so many ways to do it.
Keep them low growing, with offsets ringing the parent rosette, in beds/borders, containers/crafts. We have it all. Hurray!
Or let them mound. I like having them both ways, but some are just natural mounders. Smiling
