To get the biggest leaves, I give these C. esculenta plants tons of water, banana peels, melon rinds, any moist, heavy scraps that will melt within a day or two in the heat. The leaves so far this are year are already as big as they were at the end of the year last year. The 5-gallon bucket behind it has a slit, I fill it with water almost daily when it doesn't rain.
