They are not bitter, especially coming from the center of the heart. This will grow up to be "Baby Romaine" like you see in fancy salads. If I plant them into the ground the leaves will get bigger. I might try it. We eat enough Romaine that I have enough to experiment with. However, it needs regular water in our heat and I am not sure I have the time to give it right now. I think if they get bigger they will get bitter.
