I don't feel bad, just tired and crabby. Less crabby now as I am eating my eggplant. Smiling

It turned out so good. Wow yummy, I can't stop eating them. The eggplant skin is a little too chewy but the rest of it melts in your mouth. Really easy to do also. I am wondering if you are supposed to peel the eggplant but then the slices would have just fallen apart. And no bitterness or anything like that from eggplant skin. Just chewy.

Easy to do. Cut eggplant into slices. Brush with olive oil on top. Season with salt and pepper to taste (I leave out all salt but that is just me). Put on hot grill. Leave till tender and turn over. Meanwhile grill some tomatoes slices slightly. Only start those after turning over the eggplant cause they go fast. When the tomato cooks as much as you want it too, put a slice of tomato on top of each eggplant slice and finish grilling. Yummy!
