There are several herbs I grow, but don't use. I love the traditional ones, like Calendula and Lavender just because they're pretty. I wintersowed some Elecampane this year, and just got those planted a couple of days ago. I had bronze fennel last year, and hope that reseeds. Didn't use any, but the black swallowtail larvae loved it.
