And in summer I use Vidalia onions because somehow they give it a mellower flavor than the reds. I have no clue why I just do it in summer, but that's what I do. Absolutely wonderful and a full meal in itself actually!

Thanks Leon, to tell you the truth, I feasted on it last night! I'll bet there's not much difference in most of our cooking, you have those southern Appalachian genes somewhere in your heritage!
