Horseshoe is correct. Cut out the dead, damaged, diseased and crossing branches. Then simply walk away and look at the tree. Then you can see how it should balance and prune it accordingly.
In this country we have wassailing.
Wassaile the trees, that they may beare
You many a Plum and many a Peare:
For more or lesse fruits they will bring,
As you do give them Wassailing.
