Wow - is that popped in the microwave?
I break the bulbs apart into scales, wash them and toss them into the pan at the same stage as other 'soft' veg like green beans, zuchinni and peas, in the stir-frying process. So good!
I find the fresh scales break down if cooked too long, but at that stage they also provide starchy thickening of any sauces/pan juices. Which is also a good thing
