I'm growing Russian Giant sunflowers for the first time, and would love to collect the seeds for planting next year. I've fallen madly in love with this plant, and can picture a field of them!

This should probably be an easy thing to figure out, but for me, I'm clueless! Any suggestions on when to harvest the seeds would be most appreciated. I don't know how to tell when they are ready.

Also, do they easily hybridize? I've got some Alien Sunflowers growing in the same area. Not sure what an Alien Sunflower is, but it is pretty. My Dad sent the seeds to me, kind of as a joke, but I love them. I can't find anything online as to which sunflowers they actually are, or if they are officially called Alien.
