I have not grown Romas tomatoes in many years. These days I grow Vivia Italia, which I like far far better than Roma.

I haven't done sauce myself in years either but I do stewed tomatoes with the Viva Italia plus I also eat them fresh. Unlike Romas these are good enough to eat fresh.

I know there is an Italian heirloom that people are always recommending for sauce, maybe it is those San Marzano Redorta.
