3 cups melon puréed until smooth
3Tbs lemon juice
1/2 to 3/4 cup sugar
2Tbs vodka
Purée the melon in a food processor. Add the remaining ingredients and process until very smooth. Pour mixture in a glass 9 x 13 dish and freeze for a good four hours. Cut in cubes and return frozen mixture to the food processor. Process until really smooth and creamy. You can see it change to a really creamy texture. I freeze it in pint deli containers.
Do not omit the vodka because this keeps it from freezing too hard and getting ice crystals. You are suppose to be able to use any melon even watermelon. ENJOY!!
