Good article, Tom! I know jalapenos aren't the super-hots that you favor, but do you know if the "corking" they develop on their skin has any relation to how hot the individual peppers are? The ones I grow seem to have a LOT of variation in the amount of heat, even from the same plant -- from really mild to YIKES! (especially when I'm not expecting it to be that hot... Blinking )
