I only dry Roma's, Tom, and those I leave the skin on. I have started to bake and freeze squash now and they seem really good this year. I hope to bring a bunch back from wisc as I don't grow my own. We just don't have the space here, and pumpkins and squash don't do well for some reason.

What kind of potatoes are everyone's favorite for baking???
