I think you can cut off the bottom leaves, just leave it enough to get sunlight for the plant and the fruit. I used to keep mine trimmed when I had one indoors in Calif, for self protection and so it would fit on the shelf in the kitchen window. Maybe put some REALLY dilute fert in the cup to give the fruit some help. Keep an eye (and a finger) on the fruit to see if it starts getting soft or really yellow. They can ripen when really small like that if the plant is not getting enough light or food to sustain them. I had about a 4 bite pineapple ripen on my window sill one year.
