The recipe that I have requires that all the cubed pieces be roasted in salt, peppercorns, fresh sage leaves, coriander,cinnamon, anise seed, chili powder, butter, red pepper seed (all ground and roasted ) balsamic vinegar and molasses. The spice amounts are small but the flavor is awesome. I have a great peeler that is gripped in the palm of the hand and swiped sideways. I use one of those pastry scrapers to cut it up because it's much easier than doing so with a knife.
