For large batches I'll put it in the oven at 200° in a roasting pan and stir it up about every half hour or so til all the pink crystals are gone. The key is keep an eye on it. I store mine in the metal tins sealed with tape.

Wanted to add that I've been using the same stuff for over 15 years now.
